Philip Island Trip

  
The Crew
There is nothing like a trip to Philip Island. A great way to take time out with Family and friends. Aways something for everyone to do. Take our lot for example last weekend Matt decided to organise a trip, so he, Arch, David and Simon took out the kids, Martyn, Isaac, Reuben, Heidi, James, Hannah, Holly, Ethan and Lucian. Nine Letl Salan!!!

Playing cards roun a table, eaten a sweet wetls, sour milk bread that Gramps made was the first to go, then the 10 packet of tim tam en a chocolate he buy. "Car beat et".

The Deck

Relaxing "parken up" on the new deck dem reckon was unreal. Wal done to everybody who tek part een getting dar done. Looks great, what a fantastic idea and improvement to the Philip Island hut.

Make Hay

Wise words "Make hay while the sun shines" as a good friend of our says, It is the same idea as "store vegetables while they are in season", even though you may be eating your fill on cauliflower and broccoli now, you will miss them in the warm summer months when they are harder to grow.

Brocolli and Cauliflower are in full flight right now so if you would like extra for storing/blanching or souping just ask and a good deal will be given.
 
We would rather see this beautiful produce be put to use than ploughed in.

Recipes

Spinach Pie

1 pkt english spinach sticks removed and leaves shredded
30g Butter
1 onion finely chopped
125g (4oz) ricotta cheese
125g (4oz) feta cheese crumbled
60g tasty cheese grated
3 tablespoons parmesan cheese grated (optional)
4 eggs (Bigg Fresh Free Range of course)
1/4 teaspoon ground nutmeg
freshly ground black pepper
8 sheets filo pastry
3 tablespoons olive oil

1. Steam spinach until tender. drain and cool completely, then squeeze out excess liquid. Chop finely and place in bowl.
2. Melt butter in frypan and cook onion 4-5 minutes or until golden, Combine onion, spinach, ricotta, feta, tasty and parmesan cheeses. Mix together eggs, nutmeg and pepper then fold through spinach mixture.
3. Layer 4 sheets of pastry together, brushing between each sheet with oil. Line a deep lightly greased oven proof dish with pastry layer, spoon in spinach filling top with remaining pastry layer sheets and gently folk the edges of pastry together. Brush top with oil and bake at 200oC for 40-45 minutes or until golden and crisp.
(for the non vegetarian, bacon in this recipe is great. Cook it with the onion)

New to blogging

Thanks to the encouragement of our friends Cristina and Mary we are going to endeavour to keep you posted about whats new in the garden and life on the Bigg Fresh Farm though our blog. We see wah!!! there is alot to learn but knowledge is no weight to carry!
